What is stored

Publishing a party stores the title, the name you typed, the six Pokémon, and the time. Nothing else is collected and there are no accounts.

Editing and deleting

There is neither. A published party cannot be changed or taken down, by you or by anyone else — with no accounts, there is nothing that could tell your browser apart from anybody else's a week later.

So check your six before you publish.

Who can see a party

A party URL is unguessable but public: anyone with the link can open it, and pages are marked noindex so search engines do not list them.

Analytics

Google Analytics is used in production to count page views. It sets its own cookies.
